Tough New Drainage Legislation Could Land Caterers' in Court
"Legislation now dictates that it is a criminal offence to block a main sewer, and without
the installation of a grease trap. or a mechanism to prevent the substances that cause blockages
in a commercial kitchen, there is no defence."
"Under Building Regulations Part H, drainage serving kitchens in commercial hot food premises
should be fitted with a grease separator complying with prEN 1825-1 and designed in accordance
with prEN 1825-2. This means that an effective means of grease removal - ensuring that grease
cannot enter the drainage system in a form or quantity to be damaging - is now an essential for
any commercial kitchen"
